Abstract:	本文將針觀光飯店為主要的研究目標，將觀光飯店餐飲部門廚餘的回收部分進行分析，了解觀光飯店廚餘回收情況，並進行分解研究。期望能增加廚餘的利用率，同時減少廚餘廢棄的比例。探討目前台灣觀光飯店業之廚餘回收，與堆肥培育農產品農家之鏈結。期望能找出適合的廚餘回收策略，緊密鏈結觀光飯店業與使用堆肥之農家，以形成資源循環社會之目的。並使觀光飯店業與農家間經由回收資源，並再利用達到降低成本，創造利潤，進而形成產業群聚的型式，共創企業雙贏局面。 The purpose of this paper is focused on the food and beverage department of tourist hotels.
