    Abstract: 優質服務品質與高度顧客滿意之企業競爭優勢形成,是強烈依賴於服務員工的優質服務表現。但影響員工服務態度與服務行為之最重要因素,乃是員工是否具備了正向良好的品質意識。本研究進行餐旅品質意識量表之建構,以提供後續學者或相關餐旅業管理者運用於企業服務員工品質意識之量測與員工服務績效之提昇作業上。本研究以文獻探討法與焦點團體法來建置餐旅品質意識量表之量測問題初稿。之後,以王品集團餐廳第一線服務人員為研究對象,進行二階段式量表精簡作業。量表精簡方法為項目總和分析、信度分析與極端組檢驗法。最後所建置之餐旅品質意識量表具
